Mexican Black Beans

  1. 1 T olive oil
  2. 4 garlic cloves, minced
  3. 1 jalapeno, seeded and chopped
  4. 1/2 t ground cumin
  5. 2 (15 oz) cans black beans, rinsed and drained
  6. 1 (14.5 oz) can chicken broth
  7. fresh lime juice
  8. fresh cilantro, chopped


  1. Heat oil in heavy large saucepan over medium-high heat.
  2. Add garlic, jalapeno and cumin; saute 30 seconds.
  3. Add beans and broth and cook 5 minutes, stirring occasionally.
  4. Coarsley mash beans with potato masher.
  5. Continue boiling until thick, stirring frequently, about 20 minutes.
  6. Season to taste with lime juice, salt, and pepper.
  7. Transfer to a bowl; sprinkle with cilantro and serve.
