Shrimp and Grits Appetizer Cups

    This can serve for as an entree instead of as appetizers.


  1. 2 (12 oz) pkgs SeaPak Shrimp Scampi, prepared according to package instructions
  2. 3 c whole milk or cream
  3. 6 oz Instant Grits
  4. 2 oz butter, 1/2 stick
  5. 1/2 t salt
  6. 1/4 t pepper
  7. 1/2 c shredded Cheddar cheese
  8. 1/4 c cooked bacon crumbles (for serving)
  9. 8 appetizer cups


  1. Cook shrimp according to package instructions. Set aside, reserving the sauce separately.
  2. Pour the milk and the sauce from the shrimp into a medium saucepan.
  3. Heat the milk mixture over medium high heat, watching carefully. Just as it begins to boil, reduce heat to simmer.
  4. Stir in the grits, butter, salt and pepper. Stir until butter melts and then add in the cheese, stirring constantly as it melts.
  5. Once grits are the desired consistency (I usually stir for about 2-3 minutes), remove from the heat and place into 8 appetizer cups.
  6. Top with 4 shrimp each and sprinkle with chopped parsley and bacon crumbles.
