Bruschetta

Ingredients
- Large, thin baguette, thinly sliced
- goat cheese
- 1 c fresh plum tomates, minced and drained
- 2 T fresh basil, slivered
- 2 T green onion, minced
- 1 clove garlic, minced
- 1 T extra virgin olive oil
- splash of balsamic vinegar
- salt
- pepper
Instructions
- Spread a thin amount of goat cheese onto each baguette slice. Place under broiler and broil to lightly browned. Set aside.
- In a medium bowl, combine tomatoes, basil, green onions, garlic, olive oil, balsamic vinegar, salt and pepper. Allow to sit at room temperature for 1 hour or more, strain some of the excess juice before serving.
- Spoon mixture onto breads and serve.
