Bruschetta

Ingredients

  1. Large, thin baguette, thinly sliced
  2. goat cheese
  3. 1 c fresh plum tomates, minced and drained
  4. 2 T fresh basil, slivered
  5. 2 T green onion, minced
  6. 1 clove garlic, minced
  7. 1 T extra virgin olive oil
  8. splash of balsamic vinegar
  9. salt
  10. pepper

Instructions

  1. Spread a thin amount of goat cheese onto each baguette slice. Place under broiler and broil to lightly browned. Set aside.
  2. In a medium bowl, combine tomatoes, basil, green onions, garlic, olive oil, balsamic vinegar, salt and pepper. Allow to sit at room temperature for 1 hour or more, strain some of the excess juice before serving.
  3. Spoon mixture onto breads and serve.
