Chorizo Stuffed Hatch Chiles

Ingredients
- 1 lb chorizo, cooked and crumbled
- 1/2 c chopped onions
- 1/2 t cumin
- 1 t Mexican oregano
- 1 t ancho chile powder
- 4 Hatch chiles
- 1 c grated Cheddar cheese
- 1 (8 oz) can tomato sauce
Instructions
- Preheat oven to 375°F.
- Brown chorizo and onionin a skillet. Drain grease.
- Add cumin, oregano, and ancho chile powder, stir to combine.
- With a paring knife, cut a line down the length of each chile, remove the seeds.
- Stuff the chiles with the chorizo mixture, and place in a casserole dish.
- Top each chile with Cheddar cheese.
- Pour tomato sauce over chiles.
- Bake for about 20 minutes, uncovered, or until chiles are tender.
