Chorizo Stuffed Hatch Chiles

  1. 1 lb chorizo, cooked and crumbled
  2. 1/2 c chopped onions
  3. 1/2 t cumin
  4. 1 t Mexican oregano
  5. 1 t ancho chile powder
  6. 4 Hatch chiles
  7. 1 c grated Cheddar cheese
  8. 1 (8 oz) can tomato sauce


  1. Preheat oven to 375°F.
  2. Brown chorizo and onionin a skillet. Drain grease.
  3. Add cumin, oregano, and ancho chile powder, stir to combine.
  4. With a paring knife, cut a line down the length of each chile, remove the seeds.
  5. Stuff the chiles with the chorizo mixture, and place in a casserole dish.
  6. Top each chile with Cheddar cheese.
  7. Pour tomato sauce over chiles.
  8. Bake for about 20 minutes, uncovered, or until chiles are tender.
