Coconut Rice, Instant Pot

Ingredients

  1. 2 T coconut oil
  2. 1 large onion, diced
  3. 2 c white, basmati, or jasmine rice
  4. 1 (17.6 oz) can coconut water
  5. 1/2 t salt
  6. green onions, diced (optional garnish)

Instructions

  1. Set Instant Pot to saute and melt coconut oil in pot.
  2. Add onion and saute until tendeer.
  3. Meanwhile, measure the rice into a fine-mesh strainer and rinse under cool running water for about a minute.
  4. Add the rice, coconut water, and salt to the Instant Pot and stir to combine.
  5. Pressure cook the rice on high for 5 minutes. The pot will take 8-10 minutes to come up to pressure.
  6. Let the pressure naturally release for 10 minutes and then release any remaining pressure.
  7. Fluff and serve with green onions, if desired.
