Coconut Rice, Instant Pot

Ingredients
- 2 T coconut oil
- 1 large onion, diced
- 2 c white, basmati, or jasmine rice
- 1 (17.6 oz) can coconut water
- 1/2 t salt
- green onions, diced (optional garnish)
Instructions
- Set Instant Pot to saute and melt coconut oil in pot.
- Add onion and saute until tendeer.
- Meanwhile, measure the rice into a fine-mesh strainer and rinse under cool running water for about a minute.
- Add the rice, coconut water, and salt to the Instant Pot and stir to combine.
- Pressure cook the rice on high for 5 minutes. The pot will take 8-10 minutes to come up to pressure.
- Let the pressure naturally release for 10 minutes and then release any remaining pressure.
- Fluff and serve with green onions, if desired.
