Caramelized Onions

Ingredients
- 2 T extra virgin olive oil
- 1 1/4 lbs onions, sliced
- 1 t chopped fresh thyme leaves, optional
- 1/2 t salt
- 1/2 t pepper
Instructions
- Heat the oliveoil over medium heat in a large, heavy skillet.
- Add the onions.
- Cook, stirring often, until tender and just beginning to color, about 10 minutes.
- Add the thyme and salt.
- Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft.
