Four Sisters Dip

    In Native American Cooking: corn, beans and winter squash is known as the three sisters. This recipe includes sunflower seeds!

Ingredients

  1. 1/2 c sunflower or other light oil
  2. 4 garlic cloves
  3. 2 t chopped fresh rosemary
  4. 1 (15 oz) can hominy, rinsed and drained
  5. 1 (15 oz) can white beans, rinsed and drained
  6. 1/2 (15 oz) can pumpkin puree, 7.5 oz
  7. juice of 1/2 lemon
  8. 2 t kosher salt
  9. 2 t pepper
  10. roasted sunflower seeds for garnish

Instructions

  1. Combine oil, garlic cloves, and rosemary in a small saucepan over medium heat.
  2. Bring to a simmer and cook until the garlic is soft and just begins turning golden brown.
  3. Remove from heat and let cool.
  4. Meanwhile, combine hominy, white beans, pumpkin puree, lemon juice, salt, and pepper in a food processor.
  5. Add the garlic rosemary oil and puree until smooth.
  6. Serve topped with roasted sunflower seeds.
