Italian Chicken Salad

  1. 3 roasted peppers, torn or coarsely chopped
  2. 2 garlic cloves, crushed
  3. 2 T white wine vinegar or white balsamic vinegar
  4. pinch salt
  5. 3-4 c cold pulled rotisserie chicken
  6. 1/3 c red onion, chopped
  7. 1/4 c capers or chopped olives
  8. 1/2 c toasted sliced or slivered almonds
  9. Romaine lettuce leaves or buns for serving
  10. shredded Mozzarella cheese, for melting on sandwich


  1. Place peppers, garlic, vinegar, oil, and salt in a food processor or blender; blend until smooth.
  2. Pour dressing into a large bowl and toss with chicken, onions, capers or olives, and half of the almonds.
  3. Transfer to a platter. Garnish with remaining almonds. Serve with lettuce leaves, or on toasted buns.
