Cucumber Caprese Salad

  1. 1 1/2 c grape or cherry tomatoes halved, or 2 -3 plum tomatoes chopped
  2. 1 medium cucumber peeled and cut into quarters
  3. 8 oz fresh mozzarella cut into chunks (or use ciligene)
  4. 10-12 fresh basil leaves torn into small pieces
  5. 2 T extra virgin olive oil
  6. 1 T balsamic vinegar
  7. 1 garlic clove, minced
  8. salt to taste
  9. pepper to taste
  10. pinch of sugar to taste


  1. In a large bowl, combine tomatoes, cucumber, mozzarella and basil leaves.
  2. In a separate small bowl, whisk together olive oil, balsamic vinegar, garlic, salt, pepper and sugar.
  3. Pour over the tomato mixture and toss.
  4. Serve immediately, or prepare up to 4 hours ahead of serving.
