Ham and Bean Soup, Instant Pot

Ingredients

  1. 1 pkg 15 bean soup beans
  2. 1 T olive oil
  3. 1 large onion diced
  4. 1 c celery (approx 2 stalks), diced
  5. 3 carrots diced
  6. 2 cups leftover ham
  7. 1 bay leaf
  8. 4 cups chicken broth
  9. 4 cups water
  10. 1 (14 oz) can diced tomatoes with juice

Instructions

  1. Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.
  2. Turn on instant pot on to saute.
  3. Add olive oil and onion and saute until tender, about 3-4 minutes.
  4. Add celery, carrots, ham, bay leaf, broth, water and seasoning packet.
  5. Place the lid on, and cook on high pressure for 60 minutes. Quick release pressure.
  6. Open the lid and add tomatoes with juice, turn on to saute and return to simmer.
  7. Serve soup.
