Chicken and Cheese Quesadilla Pie

Ingredients

  1. 1 (10 in) flour tortilla
  2. 1 rotisserie chicken, skin discarded, meat shredded into bite-sized pieces (about 3 c )
  3. 1/2 c finely chopped fresh cilantro leaves
  4. 1/3 c drained jarred Peppadew piquante peppers, or jalepenos, chopped
  5. 2 c shredded sharp cheddar cheese
  6. 1/2 t salt
  7. 1/2 t pepper
  8. 2 large eggs
  9. 1 c whole milk
  10. 1 c flour
  11. 1 t baking powder

Instructions

  1. Adjust oven rack to middle position and heat oven to 450°F.
  2. Grease 9-inch pie plate.
  3. Press tortilla into prepared pie plate and spray lightly with cooking spray.
  4. Toss chicken, cilantro, peppers, 1 cup cheese, 1/2 t salt, and 1/2 t pepper in large bowl until combined.
  5. Spread filling over tortilla.
  6. Whisk eggs, milk, flour, baking powder, and 1/2 t salt in bowl until smooth.
  7. Slowly pour over filling, then sprinkle with remaining cheese.
  8. Bake until surface is golden brown, about 20 minutes.
  9. Let cool 5 minutes.
  10. Cut into wedges and serve.
