Fasolakia, Green Beans and Potatoes in Olive Oil Tomato Sauce, (Instant Pot)

  1. 15 oz diced tomatoes canned
  2. 1 c water
  3. 1/4 c olive oil
  4. 2 medium zucchini , cut into half moons
  5. 1/2 bunch fresh parsley, chopped
  6. 1 bunch fresh dill, chopped
  7. 1 tsp dried oregano
  8. 1 bay leaf
  9. 1 lb green beans fresh or frozen (if fresh stems removed)
  10. 1 large onion, sliced thin
  11. 4 medium red potatoes, diced large
  12. 1/2 t salt
  13. 1/2 t pepper


  1. Set the Instant Pot on Saute while you prep all the ingredients so it starts to warm up.
  2. Add olive oil to pot.
  3. Add onions and saute until softened.
  4. Add diced tomatoes, and water.
  5. Add zucchini, parsley, dill, oregano, bay leaf, green beans, potatoes, salt and pepper and mix well.
  6. Seal instant pot, and set the manual or pressure cook timer to 15 minutes.
  7. After cooking, quick release the pressure.
