Dried Cherry Scones

Ingredients

  1. 2 c flour
  2. 1/3 c sugar
  3. 2 t baking powder
  4. 1/4 t salt
  5. 1/3 c chilled butter, cut into pieces
  6. 1 egg
  7. 2/3 c whipping cream
  8. 1 t vanilla extract
  9. 1/2 t almond extract
  10. 1 c dried cherries
  11. egg wash, 1 egg and 1 t water, beaten
  12. sugar and sliced almonds, for sprinkling

Instructions

  1. Preheat oven: 325°F.
  2. Combine flour, sugar, baking powder and salt.
  3. Cut in butter with pastry blender.
  4. Combine egg, whipping cream, vanilla, and almond extracts, and mix into dry ingredients just until moistened.
  5. Add cherries. Mixture will be very sticky.
  6. Turn onto floured surface and knead 4 to 5 times with floured hands.
  7. Pat out to 1/2 in thick and cut circles.
  8. Brush tops with egg wash.
  9. Sprinkle tops with sugar and sliced almonds.
  10. Place on greased baking sheet.
  11. Bake for 15 to 18 minutes.
