Porcupine Meatballs

Ingredients
- 1 lb ground beef
- 1 pkg beef Rice-A-Roni (reserve seasoning packet)
- 1 egg, beaten
- 2 1/2 c hot water
Instructions
- Combine beef, rice and vermicelli, and egg.
- Shape into small meatballs (1 1/2 in diameter).
- Brown on all sides in a skillet.
- Combine seasoning packet and water.
- Pour over meatballs, cover and simmer about 30-40 minutes, until meatballs are very swollen and tender.
