Porcupine Meatballs

Ingredients

  1. 1 lb ground beef
  2. 1 pkg beef Rice-A-Roni (reserve seasoning packet)
  3. 1 egg, beaten
  4. 2 1/2 c hot water

Instructions

  1. Combine beef, rice and vermicelli, and egg.
  2. Shape into small meatballs (1 1/2 in diameter).
  3. Brown on all sides in a skillet.
  4. Combine seasoning packet and water.
  5. Pour over meatballs, cover and simmer about 30-40 minutes, until meatballs are very swollen and tender.
