Italian Hot Chocolate

This drink is very rich, so serve small portions in espresso cups.
Ingredients
- 4 oz bitterswet chocolate 70% or higher, or 3 T cocoa powder
- 1 1/2 c whole milk
- 2 T sugar
- 2 t corn starch, mixed with 2 T cold milk
Instructions
- In a saucepan over LOW heat add chocolate and a smidge of milk. Stir with a wooden spoon until melted.
- SLOWLY add remaining milk stirring until it is well combined.
- Add sugar, mix to combine.
- Whisk in corn starch mixture.
- Continue cooking over LOW heat until it becomes thick, creamy and coats the back of the wooden spoon.
