Chocolate Chip Muffins (Derby Pie Muffins)

    These muffins are a nice treat to serve on Kentucky Derby morning!


  1. 2 c flour
  2. 1/3 c light brown sugar
  3. 1/3 c sugar
  4. 2 t baking powder
  5. 1/2 t salt
  6. 2 eggs, lightly beaten
  7. 2/3 c milk
  8. 1/2 c butter, melted and cooled, (1 stick)
  9. 1 t vanilla
  10. 1 (11.5 oz) pkg milk chocolate chips
  11. 1/2 c pecans, chopped (optional)


  1. Preheat oven to 400°F.
  2. Grease 12 muffin cups.
  3. In a large bowl, stir together flour, brown sugar, sugar, baking powder, and salt.
  4. In a medium bowl, place eggs and beat lightly.
  5. Stir in milk, butter, and vanilla until blended.
  6. Make a well in center of dry ingredients.
  7. Add egg mixture and stir just to combine.
  8. Stir in chocolate chips and nuts, if using.
  9. Spoon batter into prepared muffin cups.
  10. Bake for 15 to 20 minutes or until a toothpick inserted in center of muffin comes out clean.
  11. Remove muffins to wire rack.
  12. Cool for 5 minutes, remove from tins to finish cooling.
  13. Serve warm or completely cool.


    These muffins freeze well!
