Chocolate Chip Muffins (Derby Pie Muffins)

These muffins are a nice treat to serve on Kentucky Derby morning!
Ingredients
- 2 c flour
- 1/3 c light brown sugar
- 1/3 c sugar
- 2 t baking powder
- 1/2 t salt
- 2 eggs, lightly beaten
- 2/3 c milk
- 1/2 c butter, melted and cooled, (1 stick)
- 1 t vanilla
- 1 (11.5 oz) pkg milk chocolate chips
- 1/2 c pecans, chopped (optional)
Instructions
- Preheat oven to 400°F.
- Grease 12 muffin cups.
- In a large bowl, stir together flour, brown sugar, sugar, baking powder, and salt.
- In a medium bowl, place eggs and beat lightly.
- Stir in milk, butter, and vanilla until blended.
- Make a well in center of dry ingredients.
- Add egg mixture and stir just to combine.
- Stir in chocolate chips and nuts, if using.
- Spoon batter into prepared muffin cups.
- Bake for 15 to 20 minutes or until a toothpick inserted in center of muffin comes out clean.
- Remove muffins to wire rack.
- Cool for 5 minutes, remove from tins to finish cooling.
- Serve warm or completely cool.
