Best Tomato Soup Ever (it really is!)

Nancy made this recipe and we decided it is the best tomato soup ever!
This soup can be made ahead and reheated!
Ingredients
- 1 medium white or yellow onion, diced
- 8 T butter, (1 stick)
- 2 (14.5 oz) cans diced tomatoes
- 1 (46 or 64 oz) bottle tomato juice
- 6 T sugar
- 2 chicken bouillon cubes
- pepper
- 1 c dry sherry, medium rich, (optional)
- 1 1/2 c heavy cream
- 1 (2 oz) pkg fresh basil, chopped
- 1/4 c flat leaf parsley, chopped
Instructions
- Melt butter in a large pot or Dutch oven.
- Stir in onion, and cook until translucent.
- Add diced tomatoes, tomato juice, and sugar and stir to combine.
- Next, add chicken bouillon and pepper. Stir to combine.
- Heat until almost boiling, then turn off heat.
- Add in the sherry, if desired.
- Stir in the cream, basil and parsley until combined.
- Serve the soup warm.
