Best Tomato Soup Ever (it really is!)

    Nancy made this recipe and we decided it is the best tomato soup ever!

    This soup can be made ahead and reheated!

Ingredients

  1. 1 medium white or yellow onion, diced
  2. 8 T butter, (1 stick)
  3. 2 (14.5 oz) cans diced tomatoes
  4. 1 (46 or 64 oz) bottle tomato juice
  5. 6 T sugar
  6. 2 chicken bouillon cubes
  7. pepper
  8. 1 c dry sherry, medium rich, (optional)
  9. 1 1/2 c heavy cream
  10. 1 (2 oz) pkg fresh basil, chopped
  11. 1/4 c flat leaf parsley, chopped

Instructions

  1. Melt butter in a large pot or Dutch oven.
  2. Stir in onion, and cook until translucent.
  3. Add diced tomatoes, tomato juice, and sugar and stir to combine.
  4. Next, add chicken bouillon and pepper. Stir to combine.
  5. Heat until almost boiling, then turn off heat.
  6. Add in the sherry, if desired.
  7. Stir in the cream, basil and parsley until combined.
  8. Serve the soup warm.
