Chicken Burritos

    The chicken can be substituted for steak, chorizo or any meat you prefer.

    Serve the burritos with tortilla chips and a side of queso!


  1. 4 boneless skinless chicken breasts, pounded thin
  2. 1 (4 oz) can chipotle chiles in adobo
  3. 1/2 pkg fajita seasoning
  4. splash of vinegar
  5. 1/2 c water
  6. 1/4 to 1/2 c olive oil
  7. buritto sized soft tortillas
  8. 1 recipe Cilantro Lime Rice
  9. 1 recipe Mexican Black Beans
  10. 1 recipe Corn Salsa
  11. Cheddar cheese, shredded
  12. sour cream and/or Cholula Hot Sauce (optional)


  1. Combine chipotle chiles, fajita seasoning, vinegar and water in blender or food processor; blend until smooth.
  2. While running; drizzle in oil.
  3. Pour over chicken and let sit for 1 hour or overnight.
  4. Grill chicken on low or medium low heat, until chicken is done.
  5. Discard remaining marinade.
  6. Let chicken sit for 10 minutes; cut into bite sized pieces.
  7. Wrap tortillas in a damp kitchen towel and microwave to warm and steam the shells.
  8. Assemble burritos with rice, beans and desired toppings.
  9. Wrap in aluminum foil; serve.
