Turkey Reubens

Ingredients
- 1 c finely shredded green cabbage (or one bag of coleslaw mix)
- 2 T Thousand Island dressing
- 1 T mayonnaise
- 1 T Dijon Mustard
- 12 slices of rye bread
- 6 slices of Swiss cheese
- 12 oz thinly sliced cooked turkey breast
- cooking spray
Instructions
- Combine cabbage, dressing, mayonnaise, and mustard; set aside.
- Top 6 bread slices with 1 slice cheese each.
- Top evenly with turkey. Spoon cabbage mixture evenly over turkey, and top with remaining 6 bread slices.
- Coat both sides of each sandwich with cooking spray.
- Coat a griddle or large skillet with cooking spray; place over medium-high heat until hot.
- Place sandwiches on griddle; cook 2 minutes on each side or until bread is lightly browned and cheese melts.
- Serve immediately.
