Chicken Ciabatta Sandwich

Ingredients
Chicken
- 1/2 c country Dijon mustard, grainy, 120 g
- 1/2 c Dijon mustard, 120 g
- 1.5 lb skinless, boneless chicken breasts
Relish
- 1 (16 oz) cans artichoke hearts, drained and chopped
- 4 plum tomatoes, diced and drained in colander
- 1/4 c red onion, chopped
- salt
- pepper
- 2 T extra virgin olive oil
Sandwich
- 6 ciabatta rolls, sliced
- 6 slices Gouda cheese
Instructions
Chicken
- Preheat oven to 350°F.
- In a small bowl, combine country Dijon and Dijon mustards.
- Place chicken breasts on a baking sheet.
- Baste both sides of chicken with mustard mixture.
- Bake in 350°F oven 12 to 15 minutes until juice runs clear.
- Reserve cooked chicken.
Relish
- In a medium bowl, combine artichoke hearts, tomatoes, red onion, salt, pepper, and olive oil.
Sandwich
#Preheat oven to 350°F.
- On bottom half of bread, place chicken breast, top with relish and gouda cheese.
- Broil for 5 minutes, or until cheese is melted.
