Snickerdoodle Cupcakes

Ingredients

    Cupcakes

  1. 1 1/2 c flour
  2. 2 1/2 t baking powder
  3. 1/4 t salt
  4. 4 oz unsalted butter, softened (1 stick)
  5. 1 c sugar
  6. 2 eggs
  7. 1/2 c whole milk
  8. 1 t vanilla extract
  9. Topping

  10. 2 T unsalted butter, softened
  11. 6 T flour
  12. 2 T brown sugar
  13. 1/4 c chopped nuts (optional)
  14. 1/2 t cinnamon

Instructions

    Cupcakes

  1. Preheat oven to 375°F.
  2. Line muffin tins with pape liners, spray with nonstick spray.
  3. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  4. In a large bowl, beat butter and sugar on high speed till fluffy, about 2 minutes.
  5. Add eggs, mix well.
  6. Set mixer to low speed, add milk and vanilla.
  7. Add dry ingredients and stir, just till combined.
  8. Fill muffin cups 1/2 full.
  9. Topping

  10. Mix all ingredients together till crumbly.
  11. Sprinkle over cupcakes.
  12. Bake 25 to 30 minutes.
