If you prefer, you can use milk or dark chocolate candy melts instead of the chocolate and vegetable shortening.
Ingredients
Version 1:
- 3/4 c peanut butter
- 1/2 c butter, softened, 1 stick
- 1/4 t vanilla extract
- 3 c powdered sugar
- 2 c semisweet chocolate chips
- 1 t vegetable shortening
- toothpicks
Version 2:
- 1 heaping cup peanut butter, (10 oz or 290 g)
- 1/2 c brown sugar, packed (85 g)
- 1 c powdered sugar (115 g)
- 1/2 stick, butter, melted, 4T (2 oz)
- 2 c semisweet chocolate chips
- 1 t vegetable shortening
- toothpicks
Instructions
Version 1:
- In a large bowl, mix together peanut butter, butter, vanilla, and powdered sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper lined baking sheet.
- Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
- Melt chocolate chips and vegetable shortening in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
- Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes.
- Put back on the baking sheet and refrigerate until serving.
Version 2:
- In a large bowl, mix together peanut butter, brown sugar, powdered sugar, and butter. The dough will look dry. Roll into 1 inch balls and place on a waxed paper lined baking sheet.
