Pepper Steak (slow cooker)

Ingredients
- 3 lb beef sirlion
- olive oil
- 3 T cornstarch, for dusting meat
- 3 garlic cloves, minced
- 2 T ginger, grated
- 1 large onion, diced
- 3 red bell peppers, sliced
- 3 yellow bell peppers, sliced
- 1 (8 oz) can tomato sauce
- 4 T brown sugar
- 3/4 c soy sauce, reduced sodium
- black pepper to taste
- rice for serving, cooked to package directions
- optional garnishes: bean sprouts, cilantro, limes
Instructions
- In large skillet, sear the meat in some olive oil until brown on both sides.
- Remove steak to a cutting board, and slice into 1 inch thick strips.
- Place the sliced steak into the slow cooker, then dust the meat with cornstarch and mix the meat around until there is no more visible cornstarch.
- Add the garlic, onion, peppers, tomato sauce, brown sugar, soy sauce and pepper.
- Cover and cook on High: 4 hours or Low: 6 hours.
- Serve over rice with optional garnishes.
