Beef and Asparagus Stir Fry

This is a basic stir fry sauce, you can substitue chicken, pork or shrimp and use any vegetables you like!
Ingredients
Stir Fry Sauce
- 1 1/4 c water
- 1/4 c soy sauce, reduced sodium
- 2 T corn starch
- 1/2 t black pepper
- 2 garlic cloves
- 1 t fresh ginger grated
- 1/8 t cayenne pepper
Stir Fry
- 8 oz fresh asparagus spears, bias-sliced into 1 inch pieces
- 1 large onion, coarsely chopped
- 1 T peanut oil or vegetable oil
- 1 lb lean boneless beef, cut into thin bite-sized strips
- splash of sherry, optional
- 1 (16 oz) can straw mushrooms, drained
- rice, cooked to package directions for serving
Instructions
Stir Fry Sauce
- In a small bowl, stir together water, soy sauce, cornstarch, pepper, garlic, and cayenne pepper. Set aside.
Stir Fry
- In a wok or large skillet, add oil. Heat over high heat.
- Add onions and asparagus and stir fry for 3 to 5 minutes until crisp tender. Remove vegetables from wok, cover to keep warm.
- To now empty pan, over high heat, add beef. Stir fry for 2 to 3 minutes.
- Add a splash of sherry, if desired.
- Return vegetables back to wok.
- Add mushrooms, stir to combine.
- Add stir fry sauce.
- Cook and stir till thickened and bubbly.
- Serve over rice or noodles.
