Roasted Balsamic Glazed Mushrooms

    This recipe is great served with steak!

    This recipe makes a big batch, if you prefer to make a half batch, reduce the microwave cooking time of the mushrooms to 10 minutes.

Ingredients

  1. 4 lbs white mushrooms, trimmed and halved
  2. 1 T salt
  3. 3 T olive oil
  4. 3/4 c balsamic vinegar
  5. 3 garlic cloves, minced
  6. 1 t brown sugar
  7. 3/4 t pepper
  8. 2 T unsalted butter, cut into 4 pieces
  9. 1 t minced fresh thyme

Instructions

  1. Adjust oven rack to lowest position, place rimmed baking sheet on rack, and heat to 500°F.
  2. Combine mushrooms and salt in large microwave safe bowl.
  3. Cover with large plate and microwave until mushrooms release 1 3/4 to 2 c liquid, 14 to 16 minutes, stirring halfway through microwaving.
  4. Strain mushrooms in colander and let sit for 5 minutes to drain competely.
  5. Return mushrooms to now-empty bowl, add oil, and stir to coat.
  6. Transfer mushrooms to preheated sheet and roast until browned and liquid has evaporated, 22 to 25 minutes, stirring halfway through cooking.
  7. Whisk vinegar, garlic, sugar and pepper together in 2 c liquid measuring cup.
  8. Remove mushrooms from oven, pour vinegar mixture over mushrooms, and stir to coat.
  9. Return mushrooms to oven and rost until vinegar is reduced to glaze, 9 to 12 minutes., stirring halfway through cooking.
  10. Place mushrooms in serving bowl and stir in butter and thyme.
  11. Serve.
