Pumpkin Muffins

This recipe is from Natalie's college roomate, Molly. Her mother would make them for the girls and they were a big hit!
Ingredients
Dry Ingredients
- 1 3/4 c flour
- 1 1/2 c sugar
- 1 t baking soda
- 1/2 t baking powder
- 1/2 t salt
- 1/2 t cinnamon
- 1/2 t nutmeg
- 1/2 t allspice, ground
- 1/4 t cloves, ground
Wet Ingredients
- 2 eggs, beaten
- 1/2 c canola oil
- 1 (15 oz) can pumpkin
- 1/3 c water
Instructions
- Preheat oven to 350°F
- In a large bowl, whisk eggs and oil.
- Add pumpkin and mix well.
- Sift together dry ingredients.
- Slowly add sifted dry ingredients to pumpkin mixture, alternating with water.
- Spoon mixture into greased muffin pans.
- Bake 20 minutes, rotating pans halfway through.
- Let sit 5 to 10 minutes, cool on racks.
