Pumpkin Muffins

    This recipe is from Natalie's college roomate, Molly. Her mother would make them for the girls and they were a big hit!

Ingredients

    Dry Ingredients

  1. 1 3/4 c flour
  2. 1 1/2 c sugar
  3. 1 t baking soda
  4. 1/2 t baking powder
  5. 1/2 t salt
  6. 1/2 t cinnamon
  7. 1/2 t nutmeg
  8. 1/2 t allspice, ground
  9. 1/4 t cloves, ground
  10. Wet Ingredients

  11. 2 eggs, beaten
  12. 1/2 c canola oil
  13. 1 (15 oz) can pumpkin
  14. 1/3 c water

Instructions

  1. Preheat oven to 350°F
  2. In a large bowl, whisk eggs and oil.
  3. Add pumpkin and mix well.
  4. Sift together dry ingredients.
  5. Slowly add sifted dry ingredients to pumpkin mixture, alternating with water.
  6. Spoon mixture into greased muffin pans.
  7. Bake 20 minutes, rotating pans halfway through.
  8. Let sit 5 to 10 minutes, cool on racks.
