Raspberry Vinaigrette

  1. 3 oz thawed unsweetened apple juice concentrate (1/3 c)
  2. 3 T raspberry vinegar
  3. 3 T water
  4. 2 T powdered fruit pectin
  5. 2 T extra virgin olive oil
  6. 2 t Dijon mustard
  7. 1 T chopped fresh thyme or 1/2 t dried thyme
  8. 1/4 t ground pepper


  1. In small bowl, combine apple juice, vinegar, water and pectin. Whisk until pectin dissolves, about 1 minute.
  2. Add the olive oil, mustard, thyme and pepper and whisk until blended.
  3. Refrigerate at least 1 hour before serving; the pectin will cause the dressing to thicken slightly as it chills.
