Broccoli Cheddar Soup Recipe

Ingredients
- 1/2 c Watkins cream soup base
- 1/2 c flour
- 1/2 c butter
- 1 onion, chopped
- 1/2 c carrots, chopped
- 1/2 c celery, chopped
- 1/4 t cayenne pepper
- 1 1/2 c water
- 2 1/2 c milk
- 1 (16 oz) pkg frozen broccoli, chopped or 2 c cooked fresh broccoli, chopped
- 4 oz sharp Cheddar cheese, shredded (1 c)
Instructions
- Melt butter and saute onions, carrots, and celery until softened.
- Add flour and cream soup base.
- Slowly add water to dissolve and thicken.
- Slowly add milk.
- Cook on low heat, until onions, carrots, and celery are cooked, about 20 minutes.
- Add broccoli, cook about 10 minutes.
- Add Cheddar cheese and cook,stirring constantly, till melted.
