Broccoli Cheddar Soup Recipe

Ingredients

  1. 1/2 c Watkins cream soup base
  2. 1/2 c flour
  3. 1/2 c butter
  4. 1 onion, chopped
  5. 1/2 c carrots, chopped
  6. 1/2 c celery, chopped
  7. 1/4 t cayenne pepper
  8. 1 1/2 c water
  9. 2 1/2 c milk
  10. 1 (16 oz) pkg frozen broccoli, chopped or 2 c cooked fresh broccoli, chopped
  11. 4 oz sharp Cheddar cheese, shredded (1 c)

Instructions

  1. Melt butter and saute onions, carrots, and celery until softened.
  2. Add flour and cream soup base.
  3. Slowly add water to dissolve and thicken.
  4. Slowly add milk.
  5. Cook on low heat, until onions, carrots, and celery are cooked, about 20 minutes.
  6. Add broccoli, cook about 10 minutes.
  7. Add Cheddar cheese and cook,stirring constantly, till melted.
