Cherry Tomatoes Stuffed with Herbed Cheese

Ingredients

  1. 3 dozen large cherry tomatoes (not grape tomatoes)
  2. 2 T purchased pesto
  3. 1 garlic clove, minced
  4. 2 T fresh parsley, snipped
  5. 2 T fresh chives, snipped (or dill)
  6. 1 (8 oz) pkg cream cheese
  7. 4 oz fresh goat cheese (chevre) or cream cheese
  8. fresh parsley or fresh dill sprigs for garnish

Instructions

  1. Using a sharp knife, cut off bottom 1/3 of each tomato. Hollow out tomatoes; invert on paper towels to drain.
  2. Place pesto, garlic, parsley, chives, and tarragon (or dill) in food processor. Process 15 seconds; add cream cheese and goat cheese. Process 45 seconds more or until smooth.
  3. Place filling in pastry bag fitted with large star tip; pipe into each cherry tomato.
  4. Garnish with fresh parsley or dill sprigs.
