Cherry Tomatoes Stuffed with Herbed Cheese

Ingredients
- 3 dozen large cherry tomatoes (not grape tomatoes)
- 2 T purchased pesto
- 1 garlic clove, minced
- 2 T fresh parsley, snipped
- 2 T fresh chives, snipped (or dill)
- 1 (8 oz) pkg cream cheese
- 4 oz fresh goat cheese (chevre) or cream cheese
- fresh parsley or fresh dill sprigs for garnish
Instructions
- Using a sharp knife, cut off bottom 1/3 of each tomato. Hollow out tomatoes; invert on paper towels to drain.
- Place pesto, garlic, parsley, chives, and tarragon (or dill) in food processor. Process 15 seconds; add cream cheese and goat cheese. Process 45 seconds more or until smooth.
- Place filling in pastry bag fitted with large star tip; pipe into each cherry tomato.
- Garnish with fresh parsley or dill sprigs.
