Corn Cheese Dip

Even though this dip has 1/4 c of diced jalepeno peppers, it is not very spicy!
Consider making this recipe with grilled corn, in the summer.!
Ingredients
- 1/2 c sour cream
- 1/2 c mayonnaise
- 1/3 c picante sauce or salsa
- 1/4 t pepper
- 1/8 t garlic powder
- 3 c sharp Cheddar cheese, shredded (12 oz)
- 1 (14.5 oz) can black beans, rinsed and drained, or 4 ears of corn, grilled and cut from cob
- 1 (12 oz) can whole kernel corn, rinsed and drained
- 1/4 c jalapeno pepper, seeded and chopped
- corn chips, tortilla chips and/or crackers
- sour cream dollop for garnish (optional)
Instructions
- Stir together the sour cream, mayonnaise, salsa, pepper, and garlic powder in a large bowl.
- Stir in cheese, corn, black beans and jalapeno pepper.
- Cover and chill at least 2 hours.
- Dollop with sour cream, optional, before serving.
- Serve with fritos scoops or tortilla chips.
