Ginger Salad Dressing

This dressing must be made in advance to allow flavors to combine. I usually make the day before serving.
Ingredients
- 1/2 c onions, minced
- 1/2 c peanut or canola oil
- 1/3 c rice vinegar
- 2 T water
- 2 T fresh ginger, minced
- 2 T celery, minced
- 2 T ketchup
- 4 t soy sauce
- 2 t sugar
- 2 t lemon juice, easy
- 1/2 t garlic, minced
- 1/2 t salt
- 1/4 t pepper
- Iceberg lettuce mix, bag
Instructions
- Combine all ingredients (except lettuce) in blender and mix for 30-60 seconds.
- Refrigerate to allow flavors to blend.
- Serve over lettuce.
