Ginger Salad Dressing

Pre-Notes

    This dressing must be made in advance to allow flavors to combine. I usually make the day before serving.

Ingredients

  1. 1/2 c onions, minced
  2. 1/2 c peanut or canola oil
  3. 1/3 c rice vinegar
  4. 2 T water
  5. 2 T fresh ginger, minced
  6. 2 T celery, minced
  7. 2 T ketchup
  8. 4 t soy sauce
  9. 2 t sugar
  10. 2 t lemon juice, easy
  11. 1/2 t garlic, minced
  12. 1/2 t salt
  13. 1/4 t pepper
  14. Iceberg lettuce mix, bag

Instructions

  1. Combine all ingredients (except lettuce) in blender and mix for 30-60 seconds.
  2. Refrigerate to allow flavors to blend.
  3. Serve over lettuce.
