White Bean and Artichoke Dip

  1. 2 T extra virgin olive oil
  2. cayenne pepper
  3. salt
  4. pepper
  5. 1 (15 oz) can cannellini beans, drained and rinsed
  6. 1 (14.5 oz) can artichoke hearts, drained and rinsed
  7. 1 garlic clove, minced
  8. 3 T Parmesan Regianno cheese, grated
  9. 2 T fresh lemon juice
  10. 1 t chopped fresh basil or rosemary
  11. Crackers or Assorted Vegetables for serving


  1. In a food processor, blend the beans, artichokes, garlic, and lemon juice to a smooth paste.
  2. With blade running, add olive oil.
  3. If needed, add 1-2 T water for consistency.
  4. Blend in the cheese and basil or rosemary.
  5. Season with, salt, pepper and cayenne.
  6. Serve with crackers or assorted vegetable dippers.
