White Bean and Pumpkin Hummus with Pita Chips

  1. 1 c canned pumpkin puree
  2. 2 T tahini (sesame seed paste)
  3. 2 1/2 T fresh lemon juice
  4. 1 T extra-virgin olive oil
  5. 1 t ground cumin
  6. 1/2 t smoked paprika
  7. 1/8 t salt
  8. 1 (15 oz) can cannellini or other white bean, rinsed and drained
  9. 2 garlic cloves, chopped
  10. toated pumpkin seeds, for garnish (if desired)
  11. pita chips


  1. Place pumpkin puree, tahini, lemon juice, olive oil, cumin, smoked paprika, salt, beans, and garlic in a food processor; process until smooth (about 30 seconds).
  2. Garnish with toasted pumpkin seeds, if desired.
  3. Serve pumpkin spread with pita chips.
