Smoked Gouda Asparagus Pie

  1. 1 T olive oil
  2. 2 T breadcrumbs
  3. 4 eggs
  4. 3/4 c milk
  5. 1 c roughly chopped cooked pasta, such as penne or farfalle
  6. 1 heaping T chopped fresh basil
  7. 2 c chopped asparagus
  8. 1 small yellow, onion, finely chopped
  9. salt, to taste
  10. fresh ground pepper, to taste
  11. 1 c smoked Gouda cheese, grated
  12. cooking spray


  1. Preheat oven to 350°F.
  2. Coat a 9 inch pie pan lightly with cooking spray, then coat with breadcrumbs.
  3. In a large bowl, whisk together the eggs, milk and basil.
  4. Stir in pasta, set aside.
  5. In a nonstick saute pan, over medium-high heat, heat oil. add the onion and asparagus, season with salt and pepper.
  6. Saute, until the asparagus is tender and starting to brown, about 6 to 8 minutes.
  7. Stir the asparagus mixture into the egg mixture.
  8. Stir in the cheese.
  9. Pour the mixture into the prepared pan and bake until set, about 35 minutes.
