Wisconsin Cheddar Bacon Puffs

Ingredients

  1. 1/3 c margarine or butter
  2. 1 c water
  3. 1 c all-purpose flour
  4. 4 eggs
  5. 1/2 c sharp Cheddar cheese, shredded, (2 oz)
  6. 4 slices bacon, crisp-cooked, drained, and crumbled
  7. 2 T grated Parmesan cheese

Instructions

  1. Combine margarine or butter and 1 c water in medium saucepan. Bring to a boil; stirring till butter melts.
  2. Add flour all at once, stirring vigorously. Cook and stir till mixture forms a ball that does not separate. Remove from heat; cool 10 minutes.
  3. Add eggs to mixture, one at a time, beating after each addition about 1 minute or till smooth.
  4. Beat in Cheddar cheese and crumbled bacon.
  5. Drop dough by well rounded tablespoons onto a baking sheet, about 20 mounds total.
  6. Sprinkle with Parmesan cheese.
  7. Bake at 400°F for about 30 minutes or until golden brown and puffed.
  8. Remove from baking sheet; make a slit in side of each puff to vent steam, cool slightly. Serve warm.

  10. Prepare Puffs, cool on wire rack. Place puffs in a freezer bag and seal. Chill overnight or label and freeze for up to 1 month.
  11. Place chilled puffs on a baking sheet. Heat, uncovered, at 425°F for 5 minutes. Or, let frozen puffs stand at room temperature for 30 minutes. Place on baking sheet. Heat, uncovered, at 425°F for 10 minutes.
