Turkey Chili with Garbonzo Beans

Ingredients

  1. 4 T olive oil
  2. 1 (16-19.2 oz) package lean ground turkey
  3. 2 medium onions, chopped (2 cups)
  4. 2 carrots, chopped (1 cup)
  5. 3 cloves garlic, minced
  6. 1 (28 oz) can crushed tomatoes
  7. 1 (4 oz) can diced green chilies
  8. 2 T tomato paste
  9. 1 T chili powder
  10. 1 T dried Italian seasoning, crushed
  11. 1 t salt
  12. 1 t cumin
  13. 1 t crushed red pepper
  14. 1 t black pepper
  15. 3 c reduced-sodium chicken broth
  16. 1 (15 oz) can kidney beans, rinsed and drained
  17. 1 (15 oz) can garbanzo beans, rinsed and drained
  18. 1 c fresh or frozen whole kernel corn
  19. 1 c frozen shelled edamame
  20. Sour cream, shredded cheddar cheese, and/or sliced green onions, optional

Instructions

  1. In an Instant Pot add olive oil and press saute.
  2. Add ground turkey, onions, carrots, and garlic.
  3. Saute and stir until turkey is browned and vegetables are tender, using a wooden spoon to break up meat as it cooks.
  4. Stir in crushed tomatoes, green chilies, tomato paste, chili powder, Italian seasoning, salt, cumin, crushed red pepper, and black pepper.
  5. Add broth,kidney beans,garbanzo beans, corn, and edamame.
  6. Cover and pressure cook for 5 minutes, followed by a quick release.
  7. Serve with optional toppings.
