Vegetarian Green Chili

Ingredients

  1. 2 T olive oil
  2. 1 bunch green onions, chopped (1/2 cup)
  3. 6 cloves garlic, minced
  4. 2 large green peppers, chopped
  5. 3 stalks celery, chopped
  6. 2 (12 oz) bags shelled frozen sweet soybeans (edamame)
  7. 1 (4.5 oz) can chopped green chiles
  8. 3 c vegetable broth or reduced-sodium chicken broth
  9. 1 (16 oz) jar salsa verde (green salsa)
  10. 1/2 t crushed red pepper flakes
  11. 1 t cumin
  12. 1 T chili powder
  13. 6 c fresh spinach
  14. 1/4 c chopped fresh cilantro
  15. 3 avocados, peeled, pitted, and chopped
  16. Plain lowfat yogurt or sour cream, optional

Instructions

  1. in an Instant Pot add oil and saute green onions and garlic for 2 minutes.
  2. Add the peppers and celery and saute for 1 minute.
  3. Add the edamame and green chiles.
  4. Add broth and salsa verde.
  5. Add crushed red pepper flakes, cumin, and chiili powder.
  6. Close lid and pressure cook on high for 5 minutes.
  7. Quick release and stir in the spinach; saute about 1 minute or until wilted.
  8. Remove from heat; stir in cilantro and two of the chopped avocados.
  9. Top with the remaining avocado and yogurt.
