Turkey and Butternut Squash Chili

Ingredients

  1. 2 T olive oil
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 1 lb ground turkey breast
  5. 1 lb butternut squash - peeled, seeded and cut into 1-inch dice
  6. 1/2 c chicken broth
  7. 1 (4.5 oz) can chopped green chilies
  8. 2 (14.5 oz) cans diced tomatoes
  9. 1 (15 oz) can kidney beans rinsed and drained
  10. 1 (15.5 oz) can white hominy, drained
  11. 1 (8 oz) can tomato sauce
  12. 2 T chili powder or to taste
  13. 1 T cumin or to taste
  14. 1/2 t allspice
  15. 1 t garlic salt

Instructions

  1. Heat olive oil in Instant Pot.
  2. Add onion and garlic; cook and saute for 3 minutes.
  3. Stir in turkey and cook until crumbly and no longer pink, about 5 to 7 minutes.
  4. Add butternut squash, chicken broth, green chilies, tomatoes, kidney beans, hominy, and tomato sauce; season with chili powder, cumin, allspice and garlic salt.
  5. Close lid and pressure cook on high for 15 minutes.
  6. Quick release and serve.
