Baked Sockeye Salmon in Foil

Pre-Notes

    Cooking times may vary with the thickness of the fish. Consider adding 1/2 t dried dill to the oil mixture if you don't have fresh dill to garnish.

Ingredients

  1. 1 1/2 lb sockeye salmon
  2. 3 T olive oil
  3. 1 T lemon juice
  4. 2 garlic cloves
  5. 1 t dried parsley flakes
  6. 1/2 t sea salt
  7. 1/2 t black pepper
  8. 1/4 t crushed red pepper flakes
  9. 1/2 lemon, thinly sliced
  10. 1 T fresh dill for serving

Instructions

  1. Preheat oven to 425°F.
  2. Place salmon in a large sheet of aluminum foil on a rimmed baking sheet. Pat the salmon dry with paper towels.
  3. Combine the olive oil, lemon juice, minced garlic, parsley flakes, sea salt, black pepper, and red pepper flakes in a small bowl. Drizzle over the salmon, trying to cover all parts of the salmon equally. Place the lemon slices on top of the salmon.
  4. Cinch together the sides of the foil to close the salmon into the foil packet.
  5. Bake for 10-15 minutes and then open the foil packet.
  6. Broil on high until the internal temperature reaches 145°F.
  7. Remove the salmon from the oven and serve immediately, topped with fresh dill.
