Steak with Arugula Salsa Verde

  1. 1/2 lbs steak
  2. 2 t kosher salt, divided
  3. 1 t pepper
  4. 4 c arugula, coarsley chopped
  5. 1/2 c extra virgin olive oil
  6. 2 T capers, drained
  7. 1 clove garlic, minced
  8. 1 T white wine vinegar


  1. Season the steak on all sides with 1 1/2 t salt and pepper. Let stand at room temperature for at least 10 minutes and up to 1 hour.
  2. Meanwhile, place arugula in a medium bowl.
  3. Pour olive oil on top, then stir in capers, garlic, vinegar, and 1/2 t salt.
  4. Heat grill to medium-high.
  5. Grill steak, turning often until charred on all sides and internal temp reads 130°F, for medium-rare.
  6. Serve steaks with salsa verde.
