Red Beans and Rice

Ingredients

  1. 1 lb dried red kidney beans
  2. 2 qts water
  3. 1 large onion, chopped
  4. 1/4 c vegetable oil
  5. 1 lb smoked ham, cubed
  6. 1lb smoked sausages, sliced into 1/2-inch slices
  7. 1 c water
  8. 1 T chopped garlic
  9. 1 bay leaf
  10. 1 T black pepper
  11. 2 T chopped parsley leaves
  12. 1 t whole fresh thyme leaves
  13. 2 level tablespoons salt
  14. prepared rice for serving

Instructions

  1. Pick through beans, removing all bad beans and any other foreign particles.
  2. Wash beans well.
  3. Place beans in 5 quart pot.
  4. Add the 2 quarts of water.
  5. Add the onions and bring to a boil. Lower heat and let beans boil slowly for 1 hour.
  6. When beans are soft stir well, mashing some against side of pot.
  7. Heat oil in a frying pan.
  8. Add the ham and sausage and saute in the oil for 5 minutes.
  9. Then add the sausage, ham, and oil to beans.
  10. Deglaze pan with the cup of water, then pour into beans.
  11. Add garlic, bay leaf, pepper, parsley, thyme, and salt.
  12. Let simmer for 30 minutes. Beans should be nice and creamy.
  13. Serve over rice.
  14. Top with cheese, if desired.
