Tortellini Soup

Pre-Notes

    You can use Italian seasoning instead of the basil and oregano. You can also use 2 cups chopped tomatoes instead of the canned tomatoes.

Ingredients

  1. 1 lb bulk Italian Sausage
  2. 1 c onion, chopped
  3. 2 garlic cloves, sliced
  4. 5 c beef broth
  5. 1 (14.5 oz) can diced tomatoes with basil, oregano and garlic, undrained
  6. 1 (8 oz) can tomato sauce
  7. 2 zucchini, chopped
  8. 1 large carrot, chopped
  9. 1 medium green pepper, diced
  10. 1 T dried basil
  11. 1 T dried oregano
  12. 20 oz cheese tortellini, cooked separately

Instructions

  1. Saute sausage, transfer to bowl and drain grease.
  2. Saute onion and garlic, and return sausage.
  3. Add broth, tomatoes, tomato sauce, zucchini, carrots, green pepper, basil, and oregano.
  4. Simmer about 40 minutes.
  5. Add cooked tortellini.
