Apple Spice Poke Cake

  1. 1(15.25 oz) pkg spice cake mix
  2. 3 eggs
  3. 1 c water
  4. 1/3 c vegetable oil
  5. 1 (20 oz) can apple pie filling
  6. 1 (3.4 oz) pkg vanilla pudding mix
  7. 1 c milk
  8. 1 batch Cool Whip Frosting


  1. Preheat oven to 350°F.
  2. Combine the spice cake mix, eggs, water, and oil in a large bowl and mix with a hand mixer until smooth.
  3. Pour mixture into a lightly sprayed 9x13 baking pan.
  4. Bake cake for 26 to 29 minutes or until a toothpick inserted in the middle comes out clean.
  5. Allow cake to completely cool, and then mix together apple pie filling, vanilla pudding mix and milk in a blender in order to liquify the apples.
  6. Poke holes in the cake with the end of a wooden spoon, and then pour the apple pudding filling over the cake and spread it back and forth to fill in the holes.
  7. Allow the cake to set for several hours, or refrigerate overnight.
  8. Frost with Cool Whip Frosting.
  9. Refrigerate until serving.
