Pernil, Instant Pot - Puerto Rican Pork

Ingredients

  1. 5 -7 lb pork butt roast
  2. 2 T salt
  3. 3 T oregano (Mexican or whichever you have)
  4. 2-3 Sazón with achiote
  5. olive oil
  6. 2 T Adobo, such as Goya
  7. 2 T garlic powder
  8. 3 T minced garlic.
  9. 1/2 -1 c of water.
  10. 1 batch of Puerto Rican Rice with Pigeon Peas

Instructions

  1. Cut the pork roast into large pieces, so it will fit in the Instant Pot.
  2. Using a knife, make holes throughout the pork.
  3. In a bowl, mix the salt, pepper, oregano, saźon, olive oil, adobo, garlic powder, minced garlic.
  4. Coat all surfaces of the pork with the seasonings.
  5. Turn the Instant Pot to saute, and sear the pork on all sides, about 3 minutes per side.
  6. Once completely seared, remove the pork from the Instant Pot.
  7. Add 1/2 - 1 cup water to deglaze the pot
  8. Return the pork to the Instant Pot.
  9. Cancel saute, then pressure cook on high for 90 minutes.
  10. Once done, naturally release for 10 minutes, then quick release.
  11. On a baking tray, shred the pork, and broil on high for no more than 5 minutes to crisp the pork. You may use some of the sauce, if you like.
  12. Serve over prepared Puerto Rican rice with pigeon peas.
