Maple Almond Granola

  1. 4 c old fashioned rolled oats
  2. 1 1/2 c raw slivered almonds, or other nuts
  3. 3/4 t salt
  4. 1/4 t cinnamon
  5. 1/4 t ground ginger
  6. 1/2 c melted coconut oil or olive oil
  7. 1/2 c plus 1 T maple syrup or honey
  8. 3/4 t vanilla
  9. 1/2 c chopped dried apricots
  10. 1/4 c chopped dried cherries, cranberries, raisins or currants


  1. Preheat the oven to 350°F and line a half-sheet pan with parchment paper.
  2. In a large mixing bowl, combine the oats, nuts, salt, cinnamon and ground ginger. Stir thoroughly to combine.
  3. Stir in the oil, maple syrup and vanilla.
  4. Turn the granola out onto your prepared pan and use a large spoon to spread it in an even layer.
  5. Bake for 22 to 26 minutes, stirring halfway. The granola should be turning lightly golden.
  6. The granola will crisp up as it cools.
  7. Let the granola cool before stirring in the fruits.
  8. Store the granola in an airtight container at room temperature for 1 to 2 weeks, or keep it in the freezer for longer shelf life.
