Pasta with Sausage, Tomatoes and Cream

    If available, try using dandelion sausage instead.


  1. 1 T olive oil
  2. 1 lb sweet Italian sausage link, casings removed,crumbled
  3. 1/2 t crushed red pepper flakes
  4. 1/2 cup diced onion
  5. 3 cloves garlic, minced
  6. 1 (14.5 oz) can crushed tomates
  7. 1 (15 oz) can tomato sauce
  8. 2/3 c whipping cream
  9. 1 t basil
  10. 1/4 t salt
  11. 1 lb pasta
  12. fresh basil or parsley for garnish
  13. grated Parmesan cheese


  1. Heat oil in a heavy skillet over medium heat.
  2. Add sausage and crushed red pepper.
  3. Cook until sausage is no longer pink, stirring frequently, about 7 minutes.
  4. Add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring occasionally, about 7 minutes.
  5. Add tomatoes, tomato sauce, cream, basil,and salt.
  6. Simmer until mixture thickens slightly, about 4 minutes. (Can be prepared one day ahead. Cover and chill.).
  7. Meanwhile cook pasta in large pot of boiling water, drain.
  8. Bring sauce to a simmer.
  9. Serve sauce over pasta.
  10. Sprinkle with basil or parsley
  11. Serve, passing Parmesan separately.
