Zoodle Pizza Casserole

  1. Nonstick cooking spray
  2. 3 (10-12 oz) zucchini
  3. 1 1/2 t kosher salt
  4. 2 eggs, lightly beaten
  5. 2 cups shredded mozzarella cheese (8 oz), divided
  6. 1/4 c grated Parmesan cheese
  7. 1/4 c flour
  8. 2 T cornmeal
  9. 1/2 c miniature sliced pepperoni


  1. Preheat oven to 400°F, convect if possible.
  2. Coat a 9x13 baking dish with cooking spray.
  3. Using a vegetable spiralizer, julienne cutter, or mandoline,* cut zucchini into long, thin noodles (zoodles).
  4. Place in a colander and sprinkle with salt: toss gently. Let stand 15 minutes. Pat dry with paper towels.
  5. In a large bowl combine eggs, 1/2 cup of the mozzarella cheese, the Parmesan cheese, flour, and cornmeal.
  6. Stir in zoodles
  7. Transfer to prepared dish.
  8. Bake 15 minutes or until set and no excess liquid remains.
  9. Spread with pizza sauce.
  10. Top with remaining 1 1/2 cups mozzarella cheese and pepperoni.
  11. Bake 15 to 20 minutes more or until cheese is light brown.
