Caprese Salad with Heirloom Tomatoes and Burrata

Ingredients

  1. 2 T extra virgin olive oil
  2. 1 T balsamic vinegar
  3. 1/4 t salt
  4. 1/4 t pepper
  5. 2 c baby arugula or spinach/arugula blend
  6. 4 c sliced heirloom tomatoes
  7. 4 oz burrata, sliced
  8. 1/2 cbasil chiffonade
  9. 1/4 tflaky sea salt

Instructions

  1. Whisk oil, vinegar, salt and pepper in a small bowl.
  2. Toss arugula with 1 tablespoon of the vinaigrette in a small bowl.
  3. Place the dressed arugula on a platter.
  4. Decoratively arrange sliced tomatoes and burrata over the arugula
  5. Sprinkle with basil and flaky salt.
