Pumpkin Loaf, Spiced

Pre-Notes

    If you do not have the pumpkin loaf pan you can use a regular loaf pan instead.

Ingredients

  1. 1 1/ 2 c flour
  2. 1 t baking soda
  3. 1/ 2 t baking powder
  4. 2 t cinnamon
  5. 1 t ground ginger
  6. 1/ 2 t ground cloves
  7. 1/ 2 t ground nutmeg
  8. 1/ 2 t salt
  9. 3/ 4 c sugar
  10. 3/ 4 c packed brown sugar
  11. 1 t vanilla
  12. 1 c canned pumpkin
  13. 1/ 2 c butter, melted and slightly cooled
  14. 2 eggs
  15. 1/ 4 c milk
  16. cinnamon sugar for dusting

Instructions

  1. Preheat oven to 350°F.
  2. Prep pan with baking spray containing flour or shortening and dust with flour.
  3. In a bowl combine flour, baking soda, baking powder, cinnamon, ginger, cloves, nutmeg, and salt, set aside.
  4. In a large bowl combine sugar, brown sugar, vanilla, pumpkin, eggs and butter until smooth.
  5. Add flour mixture and milk and combine all ingredients.
  6. Pour the batter into prepared pan.
  7. Tap pan on counter gently to remove bubbles.
  8. Bake until done 40-50 minutes. Loaf is done when toothpick inserted in center comes out clean.
  9. Cool cake on rack for 10 minutes, then turn out onto rack to cool completely.
  10. Dust with cinnamon sugar if desired.
