Burger with Pub Cheese on Soft Pretzel Rolls

Ingredients

    Burgers

  1. 1 1/2 lbs 80% lean ground beef
  2. 3 T finely grated white onion (grated over a bowl to catch the juices)
  3. 2 TWorcestershire sauce
  4. salt
  5. pepper
  6. drizzle of olive or canola oil
  7. 1 (8 oz) tub sharp Cheddar pub cheese
  8. pretzel hamburger rolls, split and warmed
  9. Assembly andToppings

  10. grainy Dijon mustard
  11. dill or bread-and-butter pickle chips
  12. chopped white onion
  13. watercress sprigs or onion straws

Instructions

    Burgers

  1. Heat a large griddle pan or large cast-iron skillet over medium high.
  2. In a medium bowl, mix the beef, grated onion and Worcestershire; season with salt and pepper.
  3. Form 4 large patties (thinner in the centers for even cooking).
  4. Drizzle the patties with the oil.
  5. Cook for 8 minutes, turning occasionally.
  6. Assembly and Toppings

  7. Build the burgers by spreading the bun bottoms with the grainy Dijon, then top with some pickles and chopped onion. Top with a few sprigs of watercress or onion straws, the patties, some cheese spread and the bun tops.
